3/4 cup unsalted butter -- softened
1 1/2 cups sugar
2 eggs
1 cup banana -- mashed
2 cups cake flour -- sifted
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup buttermilk
1/2 cup pecans -- chopped
1 cup coconut -- flaked
Filling
1/2 cup sugar
2 tablespoons flour
1/2 cup whipping cream
2 tablespoons unsalted butter
1/4 teaspoon salt
1/2 cup pecans -- chopped
Frosting
1/2 cup unsalted butter -- softened
1 pound powdered sugar
1/4 cup milk
1 1/2 teaspoons vanilla
Preheat oven to 375F. Butter and flour two nine inch cake pans.
Cream butter and sugar until fluffy. Add eggs, and beat two minutes. Add banana
, beat two minutes. Sift together dry ingredients and add to batter alternately
with buttermilk. Stir in nuts. Pour into cake pans and gently press coconut o
nto batter. Bake 30 minutes or until done. Remove from oven and cool in pans 10
minutes. Turn onto racks to cool thoroughly.
To prepare filling, combine sugar, flour, cream, and butter in a saucepan over
medium heat. Stir until mixture thickens. Do not boil. Stir in salt, pecans, an
d vanilla.
Remove from heat to cool.
Put one cake layer on a serving plate. Spread top with half the filling mixture
. Place other layer on top and spread remaining filling on top.
To prepare frosting, cream butter until light and add half the sugar, beating c
onstantly. Add milk and remaining sugar alternately until mixture achieves spre
ading consistency.
Blend in vanilla. Frost sides of the cake and sprinkle with coconut to garnish.
