Apple spice high rise muffins (low fat)
3cflour
2tsbaking powder
1tsbaking soda
1tscinnamon
1/4tsnutmeg
1/4tsallspice
1/2tssalt
1 1/2cbrown sugar
4eaegg whites
1cyogurt, plain
1/3coil, OR 1/3 cup applesauce
3eaapples, peeled, finely chopped
Directions:
Preheat oven to 400 degrees F. Grease 12 muffin cups. Using a fork stir flour with baking powder, baking soda, spices, salt and sugar in large mixing bowl. In another bowl whisk eggs with yogurt and oil. Stir in apples and nuts. Spoon batter into muffin cups. Cups will be very full with batter heaped in middle. Bake 15-17 minutes. Leave in pan 5 minutes and then turn out.Each: 2 g fat; 311 calories
